Fusion Tacos is New Mexico’s fastest-growing taco and healthy Mexican food franchise.
New Mexico has become an increasingly popular destination for entrepreneurs looking to start successful small business franchises. In just four short years, FusionTacos in Santa Fe has expanded into ten locations. With their delicious Mexican food and healthy alternatives winning the hungry foodie hearts of New Mexico. But they are just getting started. They are grabbing the American dream by the horns with aspirations to expand into other cities and markets.
I met with one of the Fusion Tacos founders, Perla Ramon, to learn how they have achieved their success and hear about their goals for Fusion Tacos.

Robert: When and which was your first location?
Perla: The first Fusion Tacos location was established in 2019 on Airport Road by branding founders Pedro Lopez and Perla Ramon.
Robert: What is the meaning of the name Fusion Tacos?
Perla: Fusion Tacos is the perfect combination between real Mexican food and healthy food options in one place.
Robert: What inspired you to go into the food business?
Perla: The opportunity to offer people facilities to lead a healthy lifestyle through our meal preps. Also, the need to offer our countrymen the opportunity to taste authentic Mexican food and therefore the delicious Mexican culture in our beautiful Santa Fe and its surroundings.
Robert: Did you have aspirations to grow multiple locations and the franchise model?
Perla: Yes, it is our dream and long-time employees will of course be the first ones considered to have their own Fusion Tacos franchise and help us take the brand to the highest possible level. We already have multiple locations in Santa Fe and Albuquerque. We would like to expand to other areas which have been highly requested by our clients such as Los Alamos and Las Vegas. We also have plans to expand the brand outside of New Mexico and become a national-level company represented by our base in Santa Fe, New Mexico.
Robert: Where do you plan on opening next?
Perla: We are currently waiting for the opening of our new location at 1704 Llano St suite C Santa Fe 87507. It will be our first restaurant and we want to offer a nice place for our clients, so this project has been delayed and we will soon be serving from a Food Truck.
Robert: What are some core values of Fusion Tacos?
Perla: Honesty, hard work, respect, excellence in service, and high quality are the main values that make up Fusion Tacos and by which each of our locations is governed.
Robert: What is your favorite item that you serve customers?
Perla: Without a doubt, all our dishes are delicious and have had a great response from all our customers. I have to say that the “Quesabirrias” is our most famous dish and without a doubt the one we most enjoy making and serving our customers.
Robert: Are you planning on selling your hot sauces?
Perla: The sale of sauces is something that we have considered due to the number of people who ask for them daily. However, for the moment, everything is still in planning until everything is perfect to be able to sell and distribute our delicious Fusion Salsas in a professional and pleasant manner for our clients.
