What is your favorite cut of steak? Here is the popular T-bone and ribeye! The T-bone is cut from the short loin and actually has two different steaks attached to the bone. The long side is the NY Strip. The smaller side of the T-bone is the tenderloin, commonly known as the Filet Mignon. The filet is a staple in steakhouses across the country. This tender muscle does very little, if any, of the heavy lifting on the cow. This results in a soft, tender texture. The strip is more flavorful than a tenderloin and is almost always sold as a boneless steak.
The ribeye is the juiciest, most marbled steak. It is cut from the center of the rib section. Because it has so much inter-muscular fat, overcooking it slightly will still give amazing flavor. If you’re a fan of the ribeye, don’t forget to try prime rib. It too is cut from the rib section.
